Chef Nick Berolo has 10+ years leading fine dining and hotel kitchens. His approach blends culinary craft with a fine arts background, creating food that feels familiar, elevated, and occasionally delightfully unexpected.
He loves cooking flavours from around the world, drawing inspiration from different cultures and food traditions — and he's also known for his creative whisky pairings, including featured experiences at Whisky Wonderland in Eastern Ontario.
"My food philosophy is simple: start with beautiful ingredients and cook them with care. I truly enjoy working with you to curate a menu that fits your tastes, your people, and the feel of your celebration."
You'll work closely with Chef Berolo to build a menu that reflects your vision, preferences, and budget — from a BBQ welcome dinner to a multi-course tasting menu.

Check-in is after 4pm and check-out is at 10am, with flexibility available depending on the booking schedule.
Event liability insurance is required for all bookings. If you're serving alcohol, a Special Occasion Permit is also required in Ontario.

Is catering included?
Chef-catered meals with Chef Nick Berolo are available as an add-on to the wedding package. You'll work directly with him to build a menu that fits your vision, preferences, and budget.
Do we need to bring our own tables, chairs, or décor?
We don't offer rentals directly at Calabogie House, but we're happy to help coordinate items like chairs, tables, a wedding arch, or dining sets for your event. Just let us know what you need when you reach out.
